THE PIZZA
Pizza is an authentic experience of taste and craftsmanship. We follow the International Regulations of the True Neapolitan Pizza Association (AVPN), which ensures superior quality and complete adherence to Neapolitan tradition.
The heart of our pizza is the dough, made with water, salt, yeast, and high-quality Caputo flour, and left to rise for 36 to 48 hours to ensure unique lightness, fragrance, and softness. We use select ingredients such as San Marzano DOP tomatoes, Piennolo del Vesuvio DOP cherry tomatoes, fiori di latte (milk flowers), and buffalo mozzarella DOP from Euroiovine, all chosen to enhance the authentic flavor of tradition.
Each pizza begins with the manual preparation of the tomato puree and finishes with the creation of the perfect crust, cooked in the professional Valoriani AVPN-certified oven, which enhances the flavor and aroma to the maximum.
